Salmon with tarragon crumb

This quick and easy recipe elevates the flavours and texture in a simple salmon dinner

It's National Bread Week and this recipe is an easy way to incorporate bread into your main meal. Making breadcrumbs is simple but add some spices and they make a dinner more hearty and flavoursome. This tarragon crumb goes great with salmon but also works with pork chops or chicken breasts. Preperation just takes 10 minutes and 20 minutes in the oven and it's done!

Salmon with tarragon crumb

Serves 4


  • 3 slices medium wholemeal bread
  • 50g walnuts
  • 4 spring onions, sliced
  • 3 sprigs tarragon, leaves only
  • 4 salmon fillets
  • Method:

    1. Preheat the oven to 200°C/gas mark 6.

    2. Place the bread, walnuts, spring onions, tarragon and seasoning in a food processor and blitz to give a coarse crumb.

    3. Press onto the salmon fillets and place on a greased baking tray.

    4. Bake for 20 minutes until golden and salmon is cooked throughout. Serve with mash and green vegetables.
